Serves 10 people

Ingredients for the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

For the Premix (makes 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Method

Making the Syrup: Combine all the components in a saucepan, bring to a light boil, agitating so the sugar melts. Next, turn off the stove and leave to cool entirely. Pour into an sealable bottle, seal and refrigerate it chilled, where it will keep for around four weeks.

For the Premix: Mix the specified spirits and syrup in a sizeable container, leave to sit for an hour, then strain best through muslin, making it fully clarified.

To serve: Measure 85ml from the premix into your mixing glass packed with ice, and stir lightly for a minute to chill. Filter into an frosted cocktail glass or similar, top with some cranberries and complete it by giving it a brief mist of the essential oil above the glass.
